Ahmad Shaheen is the founder and owner of The Charcoal Restaurant. A visionary entrepreneur and proud business-owner, Ahmad hails from Bethlehem, Palestine, bringing with him a rich culinary heritage. In 2001, he embarked on a journey to the United States, carrying the flavors of his homeland in his heart. Drawing inspiration from a renowned chicken and garlic sauce establishment in Bethlehem, Ahmad's passion for authentic cuisine led him to establish The Charcoal Restaurant in 2019.

Ahmad's deep-rooted connection to his hometown serves as the foundation for Charcoal's exceptional dining experience. A foodie at heart, Ahmad combined his passion for cooking with his knack for business, and gave rise to Charcoal - his very first foray in the restaurant industry. With meticulous attention to detail and a commitment to quality, he has lovingly recreated the flavors that once tantalized the taste buds of his community in Bethlehem. Through Charcoal, Ahmad aims to share the Palestinian essence of his cultural heritage with the diverse community of Louisville.
